做法:春笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出(chū )后(hòu )用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热(rè ),倒入2勺(sháo )油(yóu ),放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少量清(qīng )水(shuǐ )半掩住(zhù )春笋,盖上锅(guō )盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干的(de )时候加(jiā )入(rù )盐(yán ),翻(fān )炒(chǎo )均匀稍收汁(zhī )时盖(gài )上(shàng )锅盖焖。
