做(zuò )法:洗净(jìng )宰好鲫鱼,洗净淮山和薏(yì )米(mǐ )。用清(qīng )水把陈皮泡(pào )软,拍(pāi )裂(liè )一(yī )小块姜(jiāng ),热(rè )锅,用姜块在锅上擦一遍(biàn ),放(fàng )两勺油(yóu ),待油六成热下鱼(yú ),煎至(zhì )微(wēi )黄。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫鱼(yú )和(hé )其他材(cái )料(liào ),武火煮(zhǔ )沸,转中(zhōng )小(xiǎo )火(huǒ )煲一(yī )个(gè )半小时,下(xià )盐调(diào )味(wèi )即可品尝。
