做法:洗净宰好鲫(jì )鱼,洗(xǐ )净淮(huái )山和薏(yì )米。用清水把陈皮泡软,拍裂(liè )一小(xiǎo )块(kuài )姜,热锅(guō ),用(yòng )姜块在锅(guō )上擦一遍(biàn ),放两勺(sháo )油(yóu ),待(dài )油六成(chéng )热(rè )下(xià )鱼,煎至微(wēi )黄。煮(zhǔ )沸瓦煲里(lǐ )的清水(shuǐ ),放入煎煮(zhǔ )好(hǎo )的(de )鲫鱼(yú )和(hé )其他材料,武火煮(zhǔ )沸,转中小火(huǒ )煲一个半小时,下盐调味(wèi )即可品尝(cháng )。
