做法(fǎ ):春笋切(qiē )成片后加少许(xǔ )盐捞出(chū )后用清水浸(jìn )泡(pào ),生姜(jiāng )切片,葱(cōng )切成段。锅(guō )烧热(rè ),倒(dǎo )入(rù )2勺油,放(fàng )入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左右(yòu )。再加(jiā )入(rù )生抽、老(lǎo )抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后(hòu )转中火(huǒ )。煮(zhǔ )到(dào )水快熬干(gàn )的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁(zhī )时(shí )盖上锅(guō )盖(gài )焖。
