做法(fǎ ):春(chūn )笋切成(chéng )片后加(jiā )少(shǎo )许盐捞(lāo )出(chū )后用(yòng )清水浸泡(pào ),生姜切(qiē )片,葱切成段。锅(guō )烧热,倒(dǎo )入(rù )2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量(liàng )清水(shuǐ )半掩(yǎn )住(zhù )春笋,盖上锅盖(gài )大火煮(zhǔ )开后(hòu )转中火。煮到(dào )水(shuǐ )快熬(áo )干(gàn )的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上(shàng )锅盖焖(mèn )。
