做法:春笋切(qiē )成片(piàn )后加(jiā )少许(xǔ )盐捞出(chū )后(hòu )用(yòng )清(qīng )水浸泡,生姜切片,葱切(qiē )成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺(sháo )油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再加入生抽(chōu )、老抽(chōu )、蚝油翻(fān )炒均(jun1 )匀(yún ),加(jiā )入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮(zhǔ )开后转(zhuǎn )中火(huǒ )。煮到水(shuǐ )快(kuài )熬干的(de )时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上锅盖(gài )焖。
