做(zuò )法:洗净宰好(hǎo )鲫(jì )鱼,洗净淮山和薏米(mǐ )。用清水(shuǐ )把陈皮泡软(ruǎn ),拍裂一(yī )小块姜(jiāng ),热(rè )锅(guō ),用(yòng )姜块在锅上擦一遍(biàn ),放两勺(sháo )油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水,放入(rù )煎煮好的(de )鲫(jì )鱼和其他材(cái )料(liào ),武火(huǒ )煮沸(fèi ),转中小火煲一(yī )个半小时(shí ),下盐调味即(jí )可品尝。
