做法:春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用清水(shuǐ )浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入(rù )生(shēng )姜、春(chūn )笋、牛(niú )肉片(piàn )、葱(cōng )段(duàn )翻炒(chǎo )1分钟左右。再(zài )加入生抽(chōu )、老抽、蚝(háo )油翻炒(chǎo )均匀,加(jiā )入(rù )少量(liàng )清水半掩(yǎn )住春(chūn )笋(sǔn ),盖上(shàng )锅盖大(dà )火煮开后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干的时(shí )候加入(rù )盐,翻炒均(jun1 )匀(yún )稍收(shōu )汁时(shí )盖上锅盖(gài )焖。
