做法:洗净(jìng )宰好鲫鱼,洗净(jìng )淮山(shān )和(hé )薏米。用(yòng )清水把(bǎ )陈皮泡软(ruǎn ),拍(pāi )裂一小块姜,热锅,用姜块在锅(guō )上擦一(yī )遍,放两勺油(yóu ),待油六成(chéng )热(rè )下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸瓦煲(bāo )里的清(qīng )水,放(fàng )入煎煮好的鲫(jì )鱼和其他材(cái )料,武火煮(zhǔ )沸,转(zhuǎn )中小火煲(bāo )一个半小时(shí ),下盐调(diào )味即(jí )可品尝(cháng )。
