做(zuò )法:春笋切成片后加(jiā )少许盐捞(lāo )出后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱段翻炒1分(fèn )钟左(zuǒ )右(yòu )。再(zài )加入(rù )生抽(chōu )、老抽(chōu )、蚝油(yóu )翻(fān )炒均(jun1 )匀(yún ),加入(rù )少(shǎo )量(liàng )清水(shuǐ )半掩住(zhù )春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候(hòu )加入(rù )盐(yán ),翻炒均匀稍收(shōu )汁(zhī )时(shí )盖上锅(guō )盖焖(mèn )。
